welcome to your sixth lesson! This week, we’re talking about pantry
meals; meals
to have handy for when supplies are low and you just
can’t get out to the grocery store.
Lesson Six; Stocking
Up "Just In Case"
There will be times when you can’t get out on your planned shopping day.
Times like these will make you happy you have some fast
pantry/freezer meals handy.
Some examples of
freezer and pantry meals I keep on hand:
- Frozen pizza - cheese only for the kids and something fun for
hubby and I.
- Frozen lasagna - yes store bought I admit it. Most of the
family likes this though so it's nice to have on hand. I serve
it with bread from the bread maker.
- Frozen spaghetti casserole - this I make myself with leftovers
from spaghetti night. The extra noodles are mixed with the extra
sauce (best to have the mixture quite saucy), put into a
freezer-to-oven safe casserole dish, and topped with grated mozzarella
or cheddar cheese. Takes about 45+ minutes at 350 degrees to
reheat in the oven. I serve this with frozen garlic bread.
- Tuna melts & vegetable soup - I thaw some buns (usually hamburger
buns) and on each half, top with tuna salad and grated cheese.
Put in the oven at 350 degrees until the cheese is melted.
Vegetable soup is the ABC kind from the can - the kids like to make
words with the letters :)
- Tomato soup and grilled cheese - a stand by from childhood.
Pretty self explanatory but remember you can dress up your grilled
cheese by using fancy bread too.
Vegetable dishes are another story and are based on what veggies are
in the freezer - you can even make them into soup by cooking them and
adding them to thickened milk (or plain chicken stock). Whiz in
the blender for creamy soup - spice accordingly.
